Debemos sumar al menos otro importante elemento:\u00a0<b>el placer<\/b>\u00a0(hedonismo), que es sin duda un gran motivador y, adem\u00e1s, est\u00e1 muy unido a las\u00a0<b>emociones<\/b>.<\/p>\n<div class=\"headline-wrapper\">\n<h2 class=\"header headline-class-h2\">Una experiencia para todos los sentidos<\/h2>\n<\/div>\n<p class=\"paragraph\" data-mrf-recirculation=\"Links inline\"><b>El acto de comer<\/b>\u00a0implica una gran mezcla de sensaciones en la que pueden llegar a participar<b>\u00a0todos los sentidos<\/b>. Antes de llevarnos el alimento a la boca,<b>\u00a0su olor o color\u00a0<\/b>\u2013distintos tipos de energ\u00eda\u2013 son captados por la vista y el olfato, pero una vez dentro tambi\u00e9n participan el\u00a0<b>gusto<\/b>, el tacto y, sorprendentemente, el olfato, adem\u00e1s del o\u00eddo si el producto genera un sonido al masticar.<\/p>\n<p class=\"paragraph\" data-mrf-recirculation=\"Links inline\">Estos est\u00edmulos se unen a receptores espec\u00edficos que se encuentran en los \u00f3rganos de los sentidos.\u00a0<b>La uni\u00f3n est\u00edmulo-receptor genera impulsos nerviosos<\/b>\u00a0\u2013otra modalidad de energ\u00eda\u2013\u00a0<b>que alcanzan regiones espec\u00edficas de nuestra corteza cerebral.<\/b>\u00a0Desde aqu\u00ed se emiten respuestas; entre ellas, esas sensaciones\u00a0<b>placenteras\u00a0<\/b>que buscamos en la comida.<\/p>\n<p class=\"paragraph\" data-mrf-recirculation=\"Links inline\">Cada \u00f3rgano sensorial presenta sus particularidades. Desde el punto de vista gastron\u00f3mico, todos reconocemos la expectativa que creamos sobre el sabor de un plato cuando podemos olerlo antes de probarlo. Con la particularidad de que los receptores espec\u00edficos del olfato son los \u00fanicos que tienen caracter\u00edsticas de c\u00e9lulas neuronales.<\/p>\n<p class=\"paragraph\" data-mrf-recirculation=\"Links inline\">Ahora tambi\u00e9n sabemos que este olor, al que denominamos ortonasal, no es \u00fanico: los humanos tenemos la capacidad a\u00f1adida de<b>\u00a0oler al deglutir una comida o una bebida<\/b>, ya que algunos componentes vol\u00e1tiles de los alimentos pueden alcanzar los receptores olfatorios. La\u00a0<b>neurogastronom\u00eda\u00a0<\/b>comienza a desarrollarse como la disciplina cuyo objetivo es desvelar la complicada relaci\u00f3n entre las caracter\u00edsticas de la persona y el sabor individual que construye.<\/p>\n<div class=\"headline-wrapper\">\n<h2 class=\"header headline-class-h2\">A todos nos sabe diferente<\/h2>\n<\/div>\n<p class=\"paragraph\" data-mrf-recirculation=\"Links inline\">Pero \u00bfes suficiente la estimulaci\u00f3n de los sentidos para explicar c\u00f3mo nos sabe un alimento? Indudablemente no. En una misma mesa y probando un mismo plato todos hemos experimentado alguna vez que puede haber diferentes percepciones. Incluso podemos discrepar mucho.<\/p>\n<p class=\"paragraph\" data-mrf-recirculation=\"Links inline\">Es el cerebro el \u00f3rgano integrador de las se\u00f1ales y el emisor de la respuesta. Para ello, tambi\u00e9n activa zonas no pertenecientes a la corteza cerebral, donde est\u00e1n las relacionadas con la estimulaci\u00f3n de los sentidos.
